Can data collected in openshapa be imported into an excel file?

Yes it can. Please see the thread on exporting data:

Exporting Data

Excel will easily open anything saved as a .csv file (comma-separated file), which you can get easily from going to file > save as and selecting .csv from the drop-down menu. The other option is to write an export script. Both methods are explained in that thread.
